Served in an IPA glass. This particular Bacchus beaut offers a rich amber complexion with a creamy and well retained two finger crown on top. As it ebbs it sheds a healthy sheet of lace down the walls of the glass. Pow!! Mosaic hops hit the olfactory’s like Tyson in his prime. A hop that derives from Simcoe, she often imparts a sugary, tropical fruit note and that’s exactly what is on show here – rock melon, mango, guava, lychee and subtle citrus shine through. It’s hinting at a bit of pine but it’s more herbaceous and leafy than that. There’s also something artificial to it…almost like key lime pie or pavlova. So much character from just one hop! Amazing. In the mouth she’s nice and full with a chewy malt that really softens the bitterness of the hops. The 8.2% ABV is quite well contained and only manages a subtle sting in the tail. The taste buds are treated to the same tantalizing blend of fruits, pine and artificial sweetness on entry. An assertive hop bitterness carries through and spikes across the mid, settling to a big bitter finish that displays lingering citrus, pine and herbs on the back palate. Another excellent beer from this Brisbane based brewery. Their output lately is second to none but what is setting these guys apart is the quality in each and every beer they produce. Who says you can’t have quality and quantity??
